Nasi Ayam Hainan paling sedap[Hainanese Cicken Rice]

Actually I've been wanted to try this recipe since I came to Japan as I need to cook by myself here and gathering the ingredients had been quite difficult here... plus I barely able to find some time for me to cook slowly(patiently) as i'm busy with the study schedule -_-..! Ggrrrrr..~ Luckily for this semester I got a full holiday on Thursday and I've been filling my time reading and trying recipes.. (evethough some of them failed :p)Hihihi..

I remembered when I was little, my parents often brought us four(my siblings) to the popular "Chicken Rice Shop" and some other Chinese chicken rice restaurants at Ipoh and we still do now, the most delicious chicken rice for me was the Hainanese Chicken Rice.The crunchy layer skin and soft in the inner side, Hainanese chicken had always been my favourite whenever we step into the Chicken Rice Shop.


Image result for hainan chicken rice recipeActually the Hainanese Chicken Rice originated from the Hainan province in the Southern China.It is so delicious and popular till it became Singapore's National Dish..See.. tell ya it's soooooooooo yummy :D It probably cost much if you have it at restaurants and it might be a good idea if you cook it by yourself but trust me.. you need PATIENCE~ huahaha... let's get started :)


You will need:
-Chicken(whole or pieces)
-cloves of garlic
-slices of ginger
-chopped green onions
-sesame oil
-salt scrub
-bucket of ice(or you can use cool tap water)
-margarine
-chicken broth saved from previous cook
(if you have or you can replace it with chicken stock from stores)
-pak choy
-some pandan leaves


Steps for Hainanese chicken:

-chopped some green onions for garnishing(you can add some sesame oil) and place it in the fridge
-exfoliate the chicken with salt scrub(to scrub all the unwanted particles and small feathers). Then rinse well with water.The chicken will look smooth and shiny.
-Boil a pot of water, blanch the chicken for 1 to 2 minutes to cook the outer layer.
-Carefully take out the chicken from the boiling water and rinse under cool running water.Keep rinsing the chicken until the chicken is no longer warm when being touched. Trust me you will not want to skip this step coz this will gives the chicken skin springy and crispy texture.!!
-or else, you can just place the hot chicken into a bucket of ice water
-When done, reboil it.(you may want to repeat this step for few times)
- Then add some salt,slices of ginger and garlicfor 30 minutes.
-Before turn off the fire, you can simply add some pak choy in it if you want to and let it boil for few minutes.
-Then,set aside for 30 minutes without fire.
-take out the chicken and let it cool down for 10 minutes.Then you can just top it with green onions and serve it with the chicken soup from the broth just now.


Steps for Hainanese Chicken Rice:

This one I read from Azie kitchen, stating that to have a better chicken rice, saute the rice for 2 minutes.
-First,heat up two spoofull of chicken fats,some garlic and ginger until it smells good.Then saute the rice for two mintes.
Then,place all the ingredients into your rice pot with some sesame oil, salt,margarine and pandan leaves if you want.And if you have left over like chicken bones or neck you can just place it in to enhance the flavour.Not to forget, use the previous chicken broth instead of just plain water.It will be mamamiiiiiaaaa....!!!!


Steps for chicken sauce:

-Add a spoon of garlic oil or sesame oil and 5 big spoonful of light soya sauce,one and a half sugar, three spoonful of chicken broth and some salt for taste.
-When you want to serve your chicken, you can just simply pour the ingredients above on top of your chicken and then garnish them some chopped onions or cucumber.Then it's all done..!
